I am so excited to be participating in BooMama’s Diptacular Event today! Living in Sweet Home Alabama (or anywhere else in the South, for that matter) means that as Fall arrives with more parties, church fellowships, football and any other type of get-together that we can come up with, dips are a must for the menu!
Here are just a couple of our favorites…
1 8 oz pkg. cream cheese (softened) Whip cream cheese. Add all other ingredients. We love dipping apple slices and ginger snaps! It’s so so good! Enjoy!
1 can pumpkin
1/3 cup brown sugar
3 t. maple syrup
1 T. cinnamon (I’m not afraid to add a little extra)
2 cans chopped spinach, drained
1 T. butter
1 onion, chopped
1 large sour cream
2 cups salsa
1 cup shredded mozzarella cheese (I’m usually more generous with the cheese)
Place drained spinach in saucepan. Add butter and onion. Cook until dry. Cool then add sour cream, salsa and cheese. Chill. Serve with tortilla chips! Yum!

I love the pumpkin dip and I used to have a recipe for fabulous pumpkin cookies, but I haven't found them to be very popular since I moved away from the Chicago area.
