Chicken Fajitas!

My family loves anything Mexican. I think we could/would eat Mexican every day. Soon after Prince Charming and I got married, I came up with this delicious Chicken Fajita recipe. If you love quick and easy recipes like I do, then you will love this one.

I rarely ever measure anything for this recipe, so my “measurements” are approximate. The “whatever-looks-right” method works great for this, so have-at-it!

Chicken Fajitas

  • 3-4 boneless, skinless chicken breasts
  • 1 pkg Old El Paso taco seasoning
  • 1 large jar medium salsa
  • 2-3 garlic cloves, minced
  • 2-3 bell peppers (red & green), julienned
  • 1 large onion, sliced (I like red onion)
  • Salt and Pepper to taste

Cook chicken breasts (crockpot or stovetop). When meat is done, drain any juices. Add taco seasoning and stir very well coating all pieces of chicken. Add salsa, stir and heat through. Simmer while preparing vegetables. In saute pan, heat 1-2 Tbsps of olive oil. Add garlic, peppers, onion, salt and pepper. Saute to desired tenderness. Add vegetables to meat mixture and stir well.

Serve with: Soft tortillas and/or tortilla chips, refried beans, sour cream, salsa, cilantro, cheese, black olives and guacamole.

 

Enjoy! The leftovers are delightful as well!!
